Ingredients:
- 1/4 c. Lime Juice (2-3 Limes)
- 1/2 tsp. Crushed Red Pepper Flakes
- 1/4 c. + 1tbsp. Neutral Oil
- 2 tsp. Ground cumin
- 1lb. Chicken Breasts
- Kosher Salt (Preference)
- Freshly Ground Black Pepper (Preference)
- 2 Bell Peppers (Seeds Removed & Thinly Sliced)
- 1 Large Yellow Onion (Thinly Sliced)
- Multiple Tortillas
Directions:
Step 1: In a large bowl, whisk lime juice, red pepper, 1/4 cup oil, and 1 tsp. of cumin together. Season Chicken with salt and black pepper, then mix the chicken into the bowl and let it sit within the bowl to marinate. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Step 2: On a large skillet over medium heat, use the remaining 1 tbsp. of oil to skillet. Add chicken and cook until golden brown and cooked through until it reaches 165 degrees within the thickest part which would take up to 8 minutes. Then transfer to cutting board and let rest for 10 minutes and the slice into strips.
Step 3: While the skillet is still hot, combine peppers, onions, and remaining 1 tsp. of cumin. Season with salt and black pepper and cook while stirring occasionally until softened which can take up to 7 minutes. Then return sliced chicken into skillet and mix/stir in until nicely combined.
