Ingredients List:
- 1 (9-oz.) package of tortilla chips (Like Tostitos Cantina)
- 2 (15-oz.) cans of refried black beans, warmed
- 8 ounces of shredded smoked pork
- 1 pound pepper Jack cheese, shredded
- 1/4 cup sour cream
- 2 tablespoons of fresh lime juice
- 1 medium-sized ripe avocado, chopped
- 3/4 cup chopped plum tomato
- 1/2 cup fresh corn kernels
- 1/4 cup sliced pickled jalapeño chile
- 1/4 cup packaged fresh cilantro leaves
Directions:
- Preheat oven to 500°F. Lined a large rimmed baking sheet with aluminum foil. Arrange layers of chips, beans, pork, and cheese on prepared baking sheet. Bake in preheated oven until cheese is melted and chips are lightly browned, about 5 minutes.
- Meanwhile, stir together sour cream and lime juice in a small bowl. Set aside.
- Remove nachos from oven; immediately sprinkle with avocado, tomato, corn, jalapeño, and cilantro. Drizzle with sour cream mixture. Serve immediately.
