Chicken alfredo recipe

(Chicken Alfedo)

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 ½ cups grated Parmesan cheese
  • 1 tablespoon unsalted butter
  • 8 oz fettuccine pasta (or pasta of your choice)
  • Parsley (optional) for garnish
  • 1 tablespoon Italian seasoning (optional for extra flavor)

Directions:

1. Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Add the fettuccine pasta and cook according to package instructions (usually 8-10 minutes) until al dente.
  • Drain the pasta, reserving about 1 cup of pasta water for later, and set it aside.

2. Prepare the Chicken:

  • While the pasta cooks, heat olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt, pepper, and Italian seasoning (if using).
  • Cook the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
  • Remove the chicken from the skillet and let it rest for a few minutes, then slice it into thin strips.

3. Make the Alfredo Sauce:

  • In the same skillet, add the butter and minced garlic. Sauté for about 1 minute until the garlic is fragrant.
  • Add the heavy cream and whole milk to the pan, stirring to combine. Bring the mixture to a simmer over medium heat, then cook for 3-5 minutes, stirring occasionally.
  • Stir in the grated Parmesan cheese and continue to cook, whisking until the sauce thickens (about 2-3 minutes). If it’s too thick, you can add a little reserved pasta water to reach your desired consistency.
  • Taste the sauce and adjust seasoning with more salt and pepper if needed.

4. Combine:

  • Add the cooked pasta to the skillet and toss to coat the pasta with the Alfredo sauce.
  • Add the sliced chicken on top of the pasta and mix everything together.

5. Serve:

  • Serve the Chicken Alfredo on plates and garnish with chopped parsley (optional).
