Anytime the family gets together my step-grandmother, Mumsie (Pronounced “Mum-zee”), makes her special dish of rice and peas. Mumsie is from St. Elizabeth Parish, Jamaica (Google Maps of location is at lower left hand side of webpage) and the rice and peas is a reflection of her culture. Other traditional Jamaican dishes may include: jerk chicken, curry goat, fried plantain, and beef patties.

Mumsie’s recipe is below.
Ingredients:
- 2 cups of water
- 2 cans of red peas
- Salt
- An onion
- Thyme (2-4 sprigs)
- Black pepper
- Miss dash’s seasoning
- A can of coconut milk
- 1/2 a stick of butter
- Rice
Directions:
- Bring 2 cups of water to a boil
- Wash 2 cans of red peas
- Add in your 2 cans of red peas
- Add a teaspoon of salt
- Slice an onion
- Add into pot
- Add thyme (2-4 sprigs)
- Add a teaspoon of black pepper
- Add 2 tablespoons of miss dash’s seasoning
- Add a can of coconut milk
- Add 1/2 a stick of butter
- *Stir pot*
- On reduced heat cook for about 15 minute
- Stir and taste for good flavor
- Add rice
- Bring to a boil
- *Stir pot*
- Reduce heat to lowest temperature
- Simmer until rice is tender
