Apple Pie

Ingredients:

  • Granny smith apples (2 1/4 lbs)
  • 1.5 tsp cinnamon
  • 8 tbsp unsalted butter
  • 3 tbsp all purpose flour
  • 1/4 cup water
  • 1 cup granulated sugar
  • 1 egg
  • pie crust

Directions:

  1. Preheat oven to 425
  2. Melt butter in a medium saucepan over medium heat
  3. Whisk in 3 tbsp of flour
  4. Simmer for 1 minute, whisking constantly
  5. Whisk in 1/4 cup water, 1 cup sugar, and bring to a boil
  6. Reduce heat and continue simmering for 3 minutes while whisking frequently
  7. Remove pan from heat
  8. Peel, remove cores, and thinly slice 7 cups of apples and place them in a large bowl
  9. Sprinkle the top with 1.5 tsp of cinnamon and toss
  10. Pour the sauce over the apples and stir until apples are coated
  11. Sprinkle the table with flour and roll out pie crust to a 12 inch diameter circle
  12. Wrap pie crust around a rolling pin and transfer it to the 9 inch pie plate
  13. Add the apple mixture, mounding it slightly in the center and keeping it away from the edges
  14. Roll the second crust into an 11 inch round and cut into 10 even strips
  15. Arrange strips in a woven lattice pattern over the top
  16. Beat together 1 egg and 1 tbsp water to brush over top
  17. Bake at 425 in the center of the oven for 15 mins
  18. Reduce the heat to 350 and continue baking for 45 mins or until filling is bubbling
  19. Rest at room temperature for 1 hour
