Nigeria Jollof Rice

  • Tomatoes, bell pepper, habanero pepper, and onions
  • Seasoning cubes
  • Rice
  • Garlic, salt, bay leaf, and thyme
  • Chicken/Fish/Beef
  • Tomato paste
  • Cooking oil

Cooking  Directions

  1. Wash the chicken  or any protein of your choice and put them in a pot, add  two seasoning cubes, salt, and garlic, and cook for an hour
  2. Add cooking oil to the pot and tomato paste and stir fry it for 5 min. Blend the tomatoes, pepper, and onions, pour them into the pot, and continue to stir fry for an additional 8 min then add seasoning cubes and salt
  3. Add water and the chicken  to the pot and let it boil for 3 min, rinse the rice under running water, add it to the boiling water, and let it cook for 10 minutes then add the bay leaf and let it cook for additional 5 minutes

 

Cooking Tips: Make sure to test-taste the food to determine if the seasonings added is the right amount

Do not add too much water and never leave the food unattended to prevent burning
