New Orleans is rich in history and has a ton of culture that influence their food. Many of their dishes are influenced by African, European, and French roots. For example, when you think of New Orleans, you should think of gumbo which is a seafood and meat stewed-based dish served over rice. Crawfish is another staple in Louisiana, it is normally boiled and can be served with corn and potatoes or it can be made into etouffee which is similar to gumbo.
You cannot forget dessert, New Orleans is also known for their Beignets which are influenced by the French. They are a donut-like pastry covered in powdered sugar and normally served with coffee.
