- 2 cups white sugar
- 1 cup unsweetened cocoa powder
- 1/2 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon of salt
- 1/2 cup confectioners’ sugar
- Gather ingredients.
- Mix sugar, cocoa, and oil together in a medium bowl and beat in the eggs individually until combined. Add and stir in the vanilla.
- Combine flour, baking powder, and salt into a separate bowl. Stir in the flour mixture gradually into the cocoa mixture until mixed thoroughly. Cover the dough and place into refrigerator for 4 hours.
- Preheat oven to 350 degrees F and line two cookie sheets with parchment paper.
- Scoop chilled cookie dough into balls about 1-inch in size. Roll balls in confectioners’ sugar and put onto cookie sheet about 1 inch away from each other.
- Bake the cookies for 10 to 12 minutes. Let sit and then cool on a wire rack.
