Pumpkin Banana Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/4 cup olive oil
  • 4 tablespoons melted butter
  • 2 eggs
  • 2 ripe bananas
  • 1/2 cup canned pumpkin puree
  • 1 teaspoon vanilla extract

 

Directions:

  1. Preheat oven to 350° and spray a 12-count muffin tin with non-stick spray.
  2. In a medium bowl, whisk the flour, baking soda, cinnamon, ginger, nutmeg, and salt together. Set aside.
  3. In a large bowl combine sugar, brown sugar, olive oil, butter, and eggs. Whisk for about 2 minutes or until smooth and well combined. Add banana, pumpkin and vanilla and whisk until combined.
  4. Add dry ingredients to the wet ingredients and fold together with a spatula until no streaks of flour remain. Fill each muffin cavity about 3/4 full, then back for about 18-20 minutes or until a toothpick inserted in the center comes out clean.
