Italian Chopped Salad
Yields: 6 servings
Dressing:
- 1/4 cup of extra virgin olive oil
- juice of one lemon
- 1 tbsp red wine vinegar
- 1 tbsp dijon mustard
- 1 1/2 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- pepper to taste
Salad
- 1 large head of romaine lettuce
- 1/2 small red onion, thinly sliced
- 1/2 cup english cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 cup slicedpepperoncini
- 1/2 cup kalamata olives
- 1/3 cup roasted red peppers, drained and chopped
- 1/2 cup artichoke hearts, chopped
- 1 can chickpeas, drained and rinsed
- 1/2 cup mozzarella balls, halved
- 1/4 cup shaved parmesan cheese
- 1/4 cup fresh basil leaves, sliced
- salt and pepper to taste
Directions
- Add all of the salad ingredients to a large mixing bowl.
- Make the dressing by whisking all the ingredients together in a small mixing bowl.
- Toss, serve, and enjoy!
