Chopped Italian Salad

Italian Chopped Salad

Yields: 6 servings

Dressing:

  • 1/4 cup of extra virgin olive oil
  • juice of one lemon
  • 1 tbsp red wine vinegar
  • 1 tbsp dijon mustard
  • 1 1/2 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • pepper to taste

Salad

  • 1 large head of romaine lettuce
  • 1/2 small red onion, thinly sliced
  • 1/2 cup english cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup slicedpepperoncini
  • 1/2 cup kalamata olives
  • 1/3 cup roasted red peppers, drained and chopped
  • 1/2 cup artichoke hearts, chopped
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup mozzarella balls, halved
  • 1/4 cup shaved parmesan cheese
  • 1/4 cup fresh basil leaves, sliced
  • salt and pepper to taste

Directions

  1. Add all of the salad ingredients to a large mixing bowl.
  2. Make the dressing by whisking all the ingredients together in a small mixing bowl.
  3. Toss, serve, and enjoy!
