Green Goddess Salad Recipe

Salad Ingredient List: 

  • 1 small head of cabbage
  • 3-4 baby cucumbers
  • 1/4 cup of chives
  • 1 bundle of green onions or scallions

 

Dressing Ingredient List: 

  • 1 cup of basil leaves
  • 1 cup of spinach leaves
  • 2 cloves of garlic
  • 1 small shallot
  • juice from 2 lemons
  • 1/4 cup of olive oil
  • 1/4 cup of cashews
  • 1/3 cup of nutritional yeast
  • 1 tsp of salt
  • 2 tbsps of rice vinegar

 

Cooking Directions

  1. Wash and chop all salad ingredients with a sharp knife
  2. Place chopped ingredients in large bowl
  3. Add all liquid salad dressing ingredients to a blender first
  4. Then add the dry ingredients to the same blender
  5. Blend until dressing consistency is reached
  6. Poor dressing over salad ingredients
  7. Mix well and enjoy!
