Salad Ingredient List:
- 1 small head of cabbage
- 3-4 baby cucumbers
- 1/4 cup of chives
- 1 bundle of green onions or scallions
Dressing Ingredient List:
- 1 cup of basil leaves
- 1 cup of spinach leaves
- 2 cloves of garlic
- 1 small shallot
- juice from 2 lemons
- 1/4 cup of olive oil
- 1/4 cup of cashews
- 1/3 cup of nutritional yeast
- 1 tsp of salt
- 2 tbsps of rice vinegar
Cooking Directions
- Wash and chop all salad ingredients with a sharp knife
- Place chopped ingredients in large bowl
- Add all liquid salad dressing ingredients to a blender first
- Then add the dry ingredients to the same blender
- Blend until dressing consistency is reached
- Poor dressing over salad ingredients
- Mix well and enjoy!
