My Favorite Food

Ingredients List:

  1. 8 ounces of fettuccine noodles
  2. Bag of chopped chickenĀ  or 2 chicken breasts (cut into pieces)
  3. 1/2 pound of shrimp (thawed and peeled)
  4. 1/2 teaspoon of garlic powder
  5. 1/2 tablespoon and 1/2 tablespoon of Cajun seasoning
  6. 2 tablespoons of olive oil
  7. 2 tablespoons of butter
  8. 1 cup heavy/whipping cream
  9. 4 ounces of cream cheese
  10. Optional: 2 cloves of minced garlic
  11. 1 cup of parmesan cheese
  12. Salt and Pepper

 

Instructions:

  • Take the cream cheese out 30 minutes prior or microwave for 20-30 seconds
  • Boil a salted pot of water for the pasts and cook it according to the package
  • If the shrimp is frozen thaw under water. Peel them (leave tails on if you would like). Pat the shrimp dry, cut the chicken if its not already cut. Sprinkle both the shrimp and chicken with garlic powder and 1/2 tablespoon of Cajun seasoning.
  • Add the oil to the skillet on medium-high heat and cook for 3 minutes (flip one time).
  • Cook the chicken for about 5-6 minutes or until cooked to your liking with occasional stirring. Put on the same plate as shrimp.
  • Take the skillet off the burner and add butter, cream, cream cheese, and the remaining 1/2 tablespoon of Cajun seasoning, and garlic. Return the pan to the stove (lower the heat to medium), and stir for a few minutes until the cream cheese is melted into the sauce.
  • Let the sauce come to a bubble for about 2-3 minutes, until it is slightly thickened.
  • Add the parmesan and stir, as you do that add the shrimp and chicken back into the pan. Let it warm up for a few minutes, then season with salt and pepper as needed.
  • (optional) Add hot pasta water to the skillet prior to draining the fettuccine to the sauce. Toss the drained pasta with the sauce and serve. Can also add extra parmesan and chopped parsley.
